The Call
The call came in at 6:10 a.m. Morning prep had started, someone checked the walk-in thermometer, and it read 52°F. The cooler should hold 36–38°F. At 52°F, proteins are already in the food-safety danger zone. The restaurant had a health inspection scheduled for two days later. What We Found
Commercial walk-in coolers fail in predictable ways, and the sequence usually starts with the condenser coils.
